Creamy Chicken Ramen Soup

It's not that chicken soup is bland, but there are times when we want something with a little more zing. This recipe does the trick! It has curry powder for spice, coconut milk for creaminess, and lime juice to brighten it all up. You'll love this flavor-packed chicken soup!

The ingredients you'll need are:

  • coconut oil (1 tablespoon)
  • one large carrot sliced into thin slices no longer than two inches.
  • 1 yellow onion, chopped
  • 2 garlic cloves, chopped
  • curry powder (1 tablespoon)
  • cayenne pepper (half teaspoon)
  • salt, kosher
  • 2 (13.5 oz.) cans of well-shaken coconut milk
  • chicken broth (three cups)
  • rotisserie chicken, shredded, 2 cups
  • 1/3 cup chopped fresh cilantro, plus more for garnish
  • 1 ramen noodle packet (reserve the seasoning)
  1. Slowly melt the coconut oil in a large pot over medium heat. Add onion, bell pepper, and carrots. Cook the food until it is soft, stirring occasionally. This will usually take 6-8 minutes.
  2. Add garlic and stir for 1 minute or until fragrant then season with salt, curry powder, cayenne pepper - stirring until everything is mixed well..
  3. Pour the coconut milk and chicken broth into the pot, bring to a low simmer.Then add shredded chicken , cilantro , ramen noodles cook until done.
  4. Serve with lime wedges & freshly chopped cilantro on side

Ramen Noodle Salad

With its light Classic taste, this snack is perfect for anyone looking for a healthy option.

Below is a list of items you will need in order to complete this task:

  • 2 packets of ramen noodles (chicken flavor)
  • 1/2 cup almonds, chopped
  • extra-virgin olive oil, 2 tbsp.
  • rice vinegar, 2 tbsp
  • 1 tbsp. sesame oil, roasted
  • 1 tbsp. soy sauce (low sodium)
  • 1 tablespoon honey
  • Salt, to taste
  • black pepper, freshly ground
  • 1 red cabbage head, sliced thinly
  • 1/4 head finely sliced green cabbage 
  • 5 finely sliced green onions
  • 1 large carrot, peeled and cut into thin ribbons using a vegetable peeler
  • 1 tablespoon of sesame seeds for the dish, plus extra to garnish
  • 1 drained 10.7-ounce can of Mandarin oranges
  • 1 diced avocado

Directions

  1. Preheat oven to 400F and place rack in the center of oven. Break up ramen noodles into 1" pieces on a rimmed baking sheet and mix together with almonds.Bake 6 to 8 minutes, stirring once, until golden. Allow to cool completely before serving.
  2. In a large bowl, whisk together the olive oil, rice vinegar, sesame oil, soy sauce and honey. Season with salt and pepper
  3. To make this dish even more delicious, add in red and green cabbages, green onions, carrots, and sesame seeds. Toss the ingredients occasionally for at least twenty minutes so everything is properly coated. Right before serving, mix in the Mandarin oranges, avocado , chilled noodles ,and nuts. Top it off with some extra sesame seeds for added flavor.

Malaysian Ramen

Start your Malaysian ramen journey by adding extra vegetables, a runny soft-boiled egg and the peanuts. Spritz with lime juice to taste.

Things You'd Need

  • 2 packs of your favorite flavor ramen
  • 3 tbsp. oil (vegetable)
  • 2 minced garlic cloves
  • 1 teaspoon fresh ginger, minced
  • 1/2 medium finely chopped red onion
  • 1 finely sliced big carrot
  • 2 tbsp. soy sauce (low sodium)
  • 1 tsp. white distilled vinegar
  • 1 teaspoon Sriracha
  • 3 cups of baby spinach, roughly chopped
  • Lime juice, freshly squeezed
  • 1 tablespoon crumbled roasted unsalted peanuts

Directions:

  1. 1. Cut each noodle block in half and set aside. 
  2. 2. Put one packet of seasoning to the side for later use.
  3. Heating the oil in a large pan over medium heat, add the garlic, ginger, onion, and carrot. Cook for 4-5 minutes or until the vegetables have softened and begin to brown. Add soy sauce, vinegar Sriracha,, and half a teaspoon of ramen spice ,then add noodle cakes and vegetables. Tossing with spinach noodles and Half a cup of water. When Noodles start to soften (around 4 or 5 minutes) break them apart with LARGE spoon then toss do not overcook you want them al dente'.
  4. Decrease the heat to medium-low, add a lid to the pot, and let simmer for 5-7 minutes. Check if the water is drained and noodles are cooked through. Add pressure by squeezing in fresh lime juice. If necessary, season with more lime juice before adding crushed peanuts on top.
