Friday nights are the best time to relax at home with your favourite movie and a delicious, home cooked meal. If you're not sure what to make, here are our favorite recipes for two!
Shrimp Alfredo Pasta
Ingredients:
Fettuccine or penne pasta - 4 oz
Shrimp (frozen or raw) - 4. Oz
Butter -2 tbsp
Cream cheese- 1/2 cup
Heavy cream -1cup
Chicken broth -1 cup
Grated parmesan cheese
Onion (chopped)
Method:
Boil the pasta and set it aside. Season shrimp with salt, pepper, and red chili flakes or paprika. Saute in butter. Remove from heat and make sure they are not overcooked. In a saucepan, melt butter and saute chopped garlic cloves and onion until aromatic. Add chicken broth and let the sauce simmer for a bit before adding the cream and heavy cream, mix gently until combined. Season with salt, pepper to taste.
To make the sauce creamy, add parmesan cheese and turn off the heat.
In a bowl, mix together boiled pasta and shrimp with the sauce.
Serve and enjoy!
Good Ol' Steak and Roasted Potatoes
Ingredients:
You will need:
2 steaks
1 sprig of rosemary
1 tablespoon of olive oil
2 cloves of garlic, minced or finely chopped
2 medium-sized potatoes
4 tablespoons of butter
1/2 onion, finely sliced.
For the vegetable oil, you will need 2 to 3 tablespoons.
Method:
- Preheat oven to 400 degree Celsius
- Season steaks on both sides generously with salt and pepper, set aside.
- Peel and dice the potatoes into large cubes, boil in salted water until they are half cooked, drain.
- In a bowl, toss the partially boiled potatoes with 2 tbsp of oil, 1tbsp of minced garlic, and finely chopped parsley until evenly coated.
- In a skillet, melt butter and add olive oil on medium-high heat. Add the seasoned steaks and sear on both sides until browned.
- Add potatoes to the skillet and place it inside the oven for 15-20 minutes or until the meat is cooked to your desired preference.
- Mix two tbsp of butter, 1tbsp of minced garlic, and 1tsp of finely chopped rosemary in a bowl. When you take out the steak from the oven, place a spoonful of garlic butter on each steak until it melts; then coat the potatoes with it as well . Serve immediately and enjoy!
Honey Garlic Chicken
Ingredients:
1/4 cup soy sauce
3 tbsp. honey
2 cloves garlic, minced
Juice of 1 lemon
1 tsp. sriracha
1 tbsp. sesame oil
1 tbsp. cornstarch
1 lb chicken breast
Sesame seeds for garnish
Method:
- Preheat oven to 350 degrees.
- In a mixing bowl, whisk together soy sauce, honey, minced garlic, lemon juice, sriracha sauce, sesame oil and cornstarch.
- Season chicken with salt and pepper before searing both sides for 4 minutes in a buttered pan. Then transfer to your preheated oven and bake for 20-25 minutes until fully cooked through.
- Once the chicken is out of the oven brush with glaze , sprinkle sesame seeds on top then serve immediately .
Garlic Rosemary Chicken
Ingredients:
3 tablespoons of olive oil
1 garlic head
4 chicken breasts
1/4 cup sliced mushrooms
2 tablespoons unsalted butter
1/4 cup white wine
2/3 cup chicken broth
3 sprigs of rosemary leaves
Juice from 1/2 lemon
1/4cup spinach or baby spinach leaves
Method:
- Preheat oven to 400 degree Celsius. Drizzle one teaspoon of oil on a full garlic head and wrap in aluminum foil. Bake for an hour then set cloves aside after removing from heat. Season chicken breasts with salt and pepper then sear both sides fo8 minutes each on medium-high heat; set aside.. On the now lower temperature, add mushrooms to pan drizzled with 2 tablespoons of oil. Fry until slightly wilted.
- In a pan, melt the butter. Add garlic cloves, white wine, chicken stock, and rosemary sprigs once it has melted. Let all of this simmer for 8 minutes until reduction has occurred.
- Afterwards, add chicken breast and spinach. Cook until the spinach becomes wilted.
- Mashed potatoes go great with this meal!
